Light as air waffles

I think I have a new favorite waffle recipe.

I was flipping through the latest issue of Gourmet, and the idea of yeasted cornmeal waffles intrigued me. And I'm so glad. These are light, nutty, absolutely delicious and the batter gets put together the night before, which makes them ideal for a lazy breakfast.

Cornmeal waffles (adapted from Brown Sugar Kitchen, via Gourmet)

2 1/4 tsp active dry yeast
1/2 cup lukewarm water
2 large eggs, lightly beaten
2 cups whole milk (I actually used 1%)
2/3 cup stone ground cornmeal
1 1/2 cups all purpose flour
1 tsp flour
1 1/2 tsp salt
1 stick unsalted butter, melted and cooled
1/4 tsp baking soda

Vegetable oil for brushing

: Proof the yeast. Stir it into the lukewarm water (water should feel just barely warm when you dab it on your wrist) and let it stand until foamy, about 15 minutes.

: Mix together your dry ingredients (set aside the baking soda to add in the morning), slowly add your milk and eggs, whisking as you go. Stir in the proofed yeast mixture and the cooled butter.

: Cover the bowl and stick it in the fridge overnight.

: The following morning, stir in the baking soda and then make the waffles according to the instructions on your waffle maker. One thing to keep in mind - these waffles are thinner and lighter than you may be used to. They don't puff up much, so you don't want to pour too much batter in the waffle iron at once.

: You can keep the waffles warm while you work by sticking them on a cookie sheet in a 250F oven in a single layer.

I served them with a choice of maple syrup, apricot jam or pomegranate jelly. We didn't even end up using the butter, because they really don't need it.

If you’ve visited my blog, its no secret I’m a huge fan (borderline obsessive) of Japanese products and design. There’s something about the simple, natural and classic style of Japanese design that really speaks to me. One of these days I hope to visit Japan experience Japanese design in person but for now I’ll continue to admire (and obsess) over from afar. Finished the circus wedding, and onto another adventure...the three 'Bloomers are off to Israel in only a few weeks for yet another wedding of Shayna Bloomer's. Yes, in Israel and on the beach this time! This will certainly be a trip of a lifetime. My friends always come back with funky, beautiful stuff from Israel, and so I did a search today for some cool Israeli decor to inspire me, and lo and behold, I found this awesome Israeli jewellery designer that, well, inspired me! Israeli-based designer, Yael, of Yoola's makes these really loverly wire crocheted pea pod beads, pears and pomegranates. They are so sweet and I would like one or two for myself! Anyone know any other gorgeous Israel inspired designers? Let's get inspired!!

Guest Blogger : Suann from simplesong

I am excited to have guest blogger Suann from Simplesong share with us this week! I have long admired her for her letterpress designs, excellent blog, and I really love her simple style. It has also been fun as we have shared quick email tidbits about our little kids who are the same age. Isn't her son adorable? Welcome Suann!



I'm thrilled to be here guest blogging for Black*Eiffel, one of my favorite daily reads. I'm Suann and I've got a little blog, simplesong, where I catalog all the pretty and inspiring things I come across. By day I'm a mom to our 2 1/2 year-old and a letterpress designer + printer based outside of Washington, DC. I've had a long-time love for all things paper and letterpress printing. After a lot of hard work, it was a dream come true to start my small letterpress studio last year. I love simple (hence the name), clean designs with a touch of whimsy and femininity. All of this is reflected in my work + the things I post on my blog. And I look forward to sharing a bit of me this week here on Black*Eiffel.
