Real frozen meals

If you love someone (or a family of someones) and they are exhausted for any number of reasons, including a renovation project that is taking weeks longer than promised, give them some frozen food.

I put together an enchilada casserole (which I will share sometime, because we made it up years ago and it's a staple) and a lasagna.

Easy-peasy frozen food

** Before assembling, line a standard size freezer safe dish (like Pyrex) with some aluminum foil. I say standard size because this works best if the person you are giving it to has a dish in the right size. So 8x8" or 9x13" pans work well.

** Put it all together. Don't bake it! Pop it in the freezer uncovered until completely frozen (overnight is best).

** Take it out, spread some aluminum foil out on the counter and turn the baking dish upside down over it. The frozen casserole will pop right out. Wrap it up well with foil, tape it (I used blue painters tape, because it was sitting around) to make sure it's secure.

** Write clear instructions on a large piece of tape and place it on top. Basically, the lucky recipient just needs to take the casserole out of the freezer, remove the foil and place it in an oven safe dish. Allow it to defrost in the fridge overnight and then bake it as the original recipe recommends, but add 15 - 30 minutes extra because it will be cold. So the note on the lasagna reads "Vegetarian lasagna - Remove foil, place in a 9x13" dish. Defrost overnight in fridge. Bake at 375 degrees for 1.5 - 2 hours"

I would recommend eating frozen casseroles within a couple of weeks, or a month at the latest. You don't want to let them sit there for ages because they'll get freezer burn eventually.

Rob is blogging about this new venture.

Second: My dog Benson is in the studio this morning with me, and he only had one accident, which I quickly cleaned up. Of course when he came into the studio early this morning he was bit on the jumpy side because of all the new people he met, but quickly calmed down. He likes to jump on Meghan, she is not a big fan of that, however she has said to me numerous times this morning he is much better than when she comes over my house for dinner. He is here for a special segment we are doing on doggy fashions, this is in conjunction with a article in Cincinnati Magazine this month. He already made a special appearance at 5:45am and is now resting comfortably in our assistant news directors office. While he ran around the studio for a good hour he was silent and did not bark, but I was afraid he would break into a barking spell during the news so he is upstairs now.

However, I want to push to have him as the official Storm Tracker FOX19 Doppler Dog! What do you think? Some stations in the country do have weather dogs, plus he will be a great cheap addition to the team. He can travel with me to schools to teach the youngsters about the weather. We could even sale advertising to dog food and pet supply companies, ideas are endless!! hahaha A tv consultant once told me the more video of children and cute dogs the better. I know it will not happen but as Rob Williams likes to say, "Frank likes to stir the pot, there he goes again." LOL Anyway it's been fun having Benson as the Weather Dog at least for one day. Teaming Up with Clear Channel

Good Thursday morning, Rob here. That's a lot of listeners.

Meghan was the first one in the F0x19 family to be heard on 55KRC. She's been filing :60 second news reports this morning. Sheila and I will also file reports on 55KRC too.

Frank, Steve and Pat are doing weather forecasts through out the day for KRC listeners. They will also do hourly weather updates on 700WLW. In fact here's Frank talking to Jim Scott during his morning show today.

Also, the new deal means that Riverfest Fireworks are coming back to Fox19, the original broadcast home of the event. It will be a two hour high def special.

Norwood Firefighters Rebuild Softball Field

The Norwood High School Girl's Softball Team is playing ball on a brand new field. It's all thanks to the Norwood Fire Department.

Since 1984, the Norwood Firefighters Association has contributed thousands of dollars to the Plogman and Condron Scholarship Fund, which was set up to honor the memories of Norwood firefighters Robert Plogman and James Condron who died in the line of duty.

This year they decided to rebuild the softball field at the High School. It took $25,000 and a lot of hard work. It looks great with new dugouts and fence. At the first game, I was asked to throw out the first pitch. Thank goodness for the catcher...I left it a little short and she jumped up to grab it and make me look better. It was a fun time and I know the girls LOVE the new field.
